Never weigh pure nitrite by hand
The lethal dose for an adult is in the order of grams. That is why the industry uses 6.25 % blends: they make a fatal error physically difficult.
It is the most misunderstood additive in the industry: feared for what it does not do and misdosed because of what it does. Without nitrite there is no curing, and with badly measured nitrite there is a real risk of poisoning.

In brine it dissolves completely. In dry batter it is blended with the salt before adding, never sprinkled onto the meat.
500 ppm of erythorbate or ascorbate speed up the reaction, improve colour and reduce residual nitrite.
Legal maxima have changed in recent years and keep changing. The figure in force is looked up in the regulation, not in a forum.
Quantity used, curing salt lot and batch size. Without that record there is no defence in an inspection.

It varies by country and has been revised downwards in several jurisdictions in recent years. Look it up in the regulation in force from the relevant food authority: in the European Union the food additives regulation, in the United States 9 CFR 424.22, and in each Latin American country its own food sanitary regulation. Do not take a figure from a blog, this one included: check the current edition before formulating for sale.
Fresh ones yes, because they are cooked and eaten within days. Uncooked cured ones no: without nitrite there is no barrier against botulism, and that risk is not offset by hygiene. Products labelled «no added nitrites» generally use celery extract, which carries natural nitrate — the same compound through another door.
What concerns the agencies is the nitrosamines that can form at high temperature in the presence of nitrite. That is why erythorbate is used, which inhibits their formation, and why the limits came down. The regulatory debate is open; what is not in debate is that removing nitrite from a cured product creates an immediate and serious microbiological risk.
