Grind very cold
Meat at −2 °C and fat at −5 °C. The cut must be clean: defined grain, not paste.
Dry cured product is not cooked: it is stabilised. Safety does not come from heat but from three barriers that must fall in order — pH, water activity and nitrite. If one arrives late, the batch is a hazard.

Short mix. The culture is rehydrated separately and added last, never alongside dry salt.
Permeable casing, natural or collagen. No air: an internal bubble is a green-mould focus.
22 – 24 °C at 90 – 92 % humidity, 48 to 72 h, until pH is below 5.3. This is the critical phase.
Drop to 12 – 15 °C and step the humidity down: 85 % → 80 % → 75 %. Never in one move.
21 to 90 days depending on calibre, until 30 to 40 % of the initial weight is gone.

Half the craft is reading the defect. These are the ones that keep coming back.

| Case hardening | Humidity was dropped too fast: the surface sealed and the inside stayed wet. The most common defect, and there is no fixing it. |
| pH will not drop | Not enough dextrose, culture killed by contact with dry salt, or the room is too cold. |
| Green or black mould | Excess humidity and stagnant air. White Penicillium nalgiovense, on the other hand, is desirable and protective. |
| Smeared fat and salami that will not dry | Fat too warm when ground. It blocks the channels water needs to leave by. |
You can, depending on the natural flora of the meat, and that is how it was done for centuries. But it is a lottery: if acidification is slow, pathogens such as Staphylococcus aureus get a window. At industrial scale a directed culture is not a luxury, it is how the risk is controlled.
Because the weight loss is the product: losing 35 % of the water is what takes water activity below 0.90 and makes salami stable without refrigeration. A salami that lost 15 % is not a young salami, it is dangerous raw meat.
Then there are no cured products. Dry air gives case hardening and humid air gives mould and rot. Before you buy a stuffer, you buy humidity control.
