Real sodium by analysis, not calculated. There is almost always more than the spec says, because phosphates, nitrite and enhancers add up.
Salt is not there for flavour: it extracts the protein that binds and lowers the water activity that holds bacteria back. Removing it without replacing those two functions does not give a healthier product, it gives one that falls apart and spoils sooner.
